Smoked Kahawai

Smoked Kahawai is a favorite at home for eating with crackers or using in fish cakes. 

The Kiwi Outdoor Oven smoker hat is currently under development and due to be released early 2020. In the meantime to smoke in The Kiwi Outdoor Oven we remove the spark arrestor and cover the flue with a pan.

Add manukau wood (or your choice) to the firebox and keep the temperature low to produce plenty of smoke. When you have achieved the desired smoke levels, place the fish into the oven uncovered.

Kahawai will take approximately 15-20 minutes to smoke depending on the size of the fillet, we check by using a fork to open the thickest part of the fish and checking that it is no longer translucent.

Once the fish is finished remove from the oven, add the spark arrestor back on the flue taking care to not touch the hot sides and crank the fire up.
